Engagement photo question?

I AM NOT ENGAGED but am wondering how they work. I always see other people's photos and they look stunning. Their hair and makeup is perfect and sometimes they even have cute little outfits and themes. So how do these photos work? Does the photographer have someone do their hair and makeup? Do they have outfits for the couples? I don't get it. I get that some people just look good in pictures but some of the ones I see are TOO good. Way better than anything seen in a magazine. And it's not like these people have TONS of money although I'm sure they have more than me.
